I adapted this recipe from the blog "Veggies By Candlelight." I wanted to find a salad that featured a lot of citrus since we are in the peak growing season, January - March. Natures way of providing us with the extra boost of Vitamin C right when we need it most during cold/flu season. Don't we all need a little brightness right about now?
This salad is nice and hearty with the medjool dates, mozzarella cheese and almonds, but still substantial enough to stand on it's own for dinner with a protein or for a lighter lunch. The recipe calls for pine nuts, but I decided to use sliced almonds for a more budget friendly option. The dressing features fresh rosemary and thyme as well as fresh squeezed orange juice which makes it really bright and lovely. Clients can choose if they would like me to include both grapefruit and oranges in the salad. I decided to just add oranges when we had this for dinner.
